Mother's Day Brunch in Style: Healthy French Crepes

Happy Friday!

Mother's Day is this weekend, and one of the favorite things I like to do with my family is....Brunch! Especially a brunch get-together at home! Nothing feels more special and intimate then sharing a delicious, homemade meal with all your loved ones. However, I tend to get carried away with all the sweet desserts, pastries, nutella, and more. Check below for a wonderful, healthy and easy recipe for French Crepes. Enjoy a little taste of Paris in style this Mother's Day!

Sparkle Lists Mother's Day Brunch in Style: Healthy French Crepes
Preparation time: 5 Minutes
Cook Time: 15 Minutes
Yield: 4 Servings, around 16 Crepes

Ingredients
-1 cup Whole Wheat Flour
-1 ¾ cup Milk
-3 Eggs
-3 tbsp Butter, melted plus 1 tbsp extra for the pan
-¼ tsp Salt

-1 cup of Greek Yogurt
-1 cup of Fresh Strawberries (or any other topping you prefer)

Directions
1. In a large bowl, whisk the milk, eggs, and melted butter together.
2. Add the flour and salt to the egg mixture, stir gently.  
3. Warm an 8-inch pan over medium heat. Lightly coat the pan with butter, or spray with oil. Add ¼ cup of batter to the pan, swirling quickly to evenly coat the pan with a thin layer of batter.
Tip: If you let the batter set before spreading, the crepes will be thick.
4. Cook until the underside of the crepe is golden brown (2 to 3 minutes). Flip the crepe with a spatula and cook the remaining side for 2 more minutes.
5. Serve warm with fresh fruit and a dollop of Greek yogurt.
